


Chef Terrell Cole of Dark Horse Grill and Catering bring us his flavorful Cajun garlic crusted red snapper, fresh avocado, and heirloom tomatoes. Fresh fish with fresh veggies is always a favorite. And yes, that is red pepper jam on the plate!

Red snapper
1 piece desired portion of fish(9oz)
Salt and pepper to taste
¼ cup fresh parsley chopped
¼ cup minced fresh garlic
1c bread crumbs
1Tablespoon oil
In a bowl combine garlic, parsley and breadcrumbs
Season fish with salt and pepper (or whatever your desired seasoning)
In a nonstick pan heat oil on medium heat
Flesh side place into breadcrumb mixture – place in pan and sear until golden brown.
Cooking both sides. Place fish in pre heated oven for about 10 minutes.
Pull out fish and serve with veg and starch of your choosing.
I used fresh avocados and a red pepper jam!
